ICÚ opened December 2017 in Puerto Vallarta. Giving birth to a long-time dream from our chefs Josue Jimenez and Mauricio Leal. The word Icú (e – koo) means corn in Huichol language. As corn is such a vital ingredient in Mexican cuisine, it is broadly used by our chefs in our ever-changing menu.

Our menu is based on ideas that find base on dishes that both our chefs grew up with. Being Puerto Vallarta native, seafood plays a big part. One can find traditional recipes intertwined with contemporary techniques and the most fascinating product.

Seasonality plays a considerable part on menu design. The menu its constantly being tailored to showcase the finest ingredients available.

Diners have a choice between experiencing a 5 or 9 course dinner, as well as an a la carte menu. A very amusing wine pairing is available for pre-fix menus, which include red and white wine, as well as local beers and spirits.

A sumtuous selection of the finest Mexican wine coming from various wine regions, including El Valle de Guadalupe, Valle de Parras and Arteaga can be found in our wine list. Offering an all Mexican wine list has been our commitment to sustainability in our menus.

An award for “Best new restaurant in Mexico” was given to Icú on October 2019, winning over various of the best upcoming restaurants in the country.
